Many recipes call for sautéing some onions after the chicken is browned and taken out of the pot. Tasters approved of the onion but commented that a modest amount of the onion’s pungent flavor was enough to balance the sweetness of the tomatoes. Whole niçoise olives appeared in nearly every recipe, and we liked their distinctive flavor. Though they’re less authentic in this dish, kalamata olives are often easier to find, and we found that they made a good substitute.
